Wagyu Beef
The world-renowned Wagyu, often considered the most delicious beef globally. We not only utilize Hokkaido Wagyu but also carefully select the finest Wagyu, such as Sendai beef and Miyazaki beef, based on sourcing conditions and meat quality
Sea urchin (uni)
Hokkaido takes pride in its sea urchin (uni).
While commonly, a substance called 'miyoban' is used for preservation, we do not use it in the sea urchin we offer. This allows you to experience the true, natural deliciousness of uni, unaltered by any additives
Salmon roe (ikura)
Ikura, a representative foodstuff of Hokkaido.
We use the freshest possible ikura harvested in Hokkaido. Interestingly, it pairs exceptionally well with Wagyu, and in our private chef services, we propose unique ways to enjoy them together.
Vegetables
In Hokkaido, during the winter, vegetables are left under the snow to enhance their sweetness. The Niseko area, with its abundant fields, yields a variety of splendid vegetables. They pair exceptionally well with Wagyu beef.
Rice (Rankoshi)
The town of Rankoshi in the Niseko area is renowned in Hokkaido for its rice production. We use award-winning rice from Rankoshi, which has received numerous accolades.
